It is important to purchase quality cookware because of it's durability, even heat distribution, and it's ability to withstand  the high temperatures associated with restaurant quality food. There are a few things that are important when choosing a cookware set. The size and assortment of the cookware is important because the size of the pots and pans determines how much of any given item you can produce at any given time, if you plan on cooking for more than ten people on a frequent basis then you want to look for a set that has a large stock pot, 10-12 in. sauté pan, and a large roasting pan. You want to also be sure that the cookware will fit in your oven and not dominate the stove top when cooking more than one item. The assortment of pots and pans in a cookware set is important to consider because you may want to cook a lot of steamed items, so you should  take that into consideration before you purchase a set. You also want to consider the number of sauté pans in the set, a large one for sautéing  lean poultry, grass fed beef, or wild fish, and a small one for omelettes or crepes on a Saturday morning.
